Sarah’s Creek Sauvignon Blanc
Harvested by hand, the grapes used in our Sauvignon Blanc rest and cool overnight before being destemmed and pressed. The first round of grapes are harvested at reduced sugar levels; this adds greener notes and crisp acidity to the final product. The second pick is done once the grapes are physiologically ripe, which extracts and elevates fruity and tropical notes.
This method of harvesting in two stages results in a complex wine with harmonious acidity.
Our Sauvignon Blanc contains a complex nose consisting of passionfruit, grapefruit, and ripe fig aromas, complemented by a fruity palate with a balanced acidity.
