SARAH’S CREEK
CABERNET SAUVIGNON
Planted in a primarily limestone, secondarily shale soil – the goal was to make a wine that displays bold fruity flavours and soft tannins, while preserving an excellent composition. This is a tall task, but through strict canopy management and harvesting at optimal ripeness, shaded fruit can be prevented.
This Cabernet Sauvignon displays ripe blackcurrant, and dried herb characters on the nose, which are backed up with some spicy oak notes. The palate is silky and soft, with rich, ripe tannins and a long finish.
