Flagship Chardonnay 2015
All our Chardonnay vineyards are planted on limestone soils. This type of soil brings out the mineral and citrus notes in Chardonnay varietals. The grapes were harvested in three picks, one greener pick, the second pick at optimal ripeness and a third riper pick. This adds to the complexity of the wine.
Grapes are harvested by hand for greater quality control. The grapes were cooled overnight. The following day the grapes are destemmed and crushed with controlled skin contact to add phenolic complexity. Fermentation took place at cooler temperatures with lees contact of 3 months. Malolactic fermentation and maturation was completed in a combination of 4th fill French oak casks and stainless steel tanks.

Residual Sugar: 4.8 g/l
A lightly wooded Chardonnay with hints of melon and peach on the nose. The palate is fresh and complex with a creamy lingering aftertaste.
